- 1 large onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef (or turkey)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 cup beef broth (or vegetable broth)
- 1 bell pepper, diced
- Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the ground beef (or turkey) to the pot. Break it apart with a spatula and cook until browned, about 5-7 minutes.
- Stir in the chili powder, ground cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Cook for 1-2 minutes to toast the spices.
- Pour in the crushed tomatoes, tomato paste, kidney beans, and black beans. Stir to combine.
- Pour in the beef broth and add the diced bell pepper. Stir everything together.
- Bring the chili to a gentle boil, then reduce the heat to low. Cover and let it simmer for 45 minutes, stirring occasionally.
- Taste the chili and adjust the seasoning if necessary. If you prefer more heat, add additional cayenne pepper or chili powder.
- Once the chili has thickened and the flavors have melded, it’s ready to serve.
