2 cups carrots, peeled and grated
2 apples, diced (Gala, Honeycrisp, Fuji, or Granny Smith)
1/4 cup chopped celery (optional)
1/2 cup mayonnaise
1 tablespoon lemon juice or apple cider vinegar
1 tablespoon granulated sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup raisins or dried cranberries
1/4 cup chopped walnuts or pecans
1 tablespoon Greek yogurt (to lighten dressing)
1/2 teaspoon Dijon mustard
Instructions
Peel and grate the carrots. Dice the apples into small bite-sized pieces. Finely chop celery if using.
In a small bowl, whisk together mayonnaise, lemon juice, sugar, salt, and black pepper until smooth.
In a large bowl, add carrots, apples, celery, and any optional add-ins.
Pour dressing over the salad and toss gently until evenly coated.
Refrigerate for at least 30 minutes to allow flavors to meld.
