Carrot Apple Salad is a crisp, creamy, and refreshing side dish made with freshly shredded carrots, crunchy apples, and a lightly sweet and tangy dressing.

  • 2 cups carrots, peeled and grated
  • 2 apples, diced (Gala, Honeycrisp, Fuji, or Granny Smith)
  • 1/4 cup chopped celery (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins or dried cranberries
  • 1/4 cup chopped walnuts or pecans
  • 1 tablespoon Greek yogurt (to lighten dressing)
  • 1/2 teaspoon Dijon mustard

Instructions

  1. Peel and grate the carrots. Dice the apples into small bite-sized pieces. Finely chop celery if using.
  2. In a small bowl, whisk together mayonnaise, lemon juice, sugar, salt, and black pepper until smooth.
  3. In a large bowl, add carrots, apples, celery, and any optional add-ins.
  4. Pour dressing over the salad and toss gently until evenly coated.
  5. Refrigerate for at least 30 minutes to allow flavors to meld.
