14 oz caramels, unwrapped
2 tablespoons milk
10 oz milk chocolate
Instructions
Arrange the roasted and salted cashews on a baking sheet lined with parchment or wax paper, grouping them into small clusters that will hold together after coating.
In a microwave-safe bowl, combine the unwrapped caramels and milk. Heat at 50% power for 45 seconds, then stir. Repeat in 45-second intervals, stirring after each, until the mixture is smooth and fully melted.
Spoon the melted caramel over each cashew cluster, ensuring the caramel seeps into the cracks to hold the clusters firmly. Allow the caramel to set for a few minutes but not harden completely.
In a separate bowl, gently melt the milk chocolate until smooth, either using a microwave in short bursts or a double boiler setup, stirring frequently to avoid burning.
Spoon the melted milk chocolate over the caramel-coated clusters, covering them evenly. Let the chocolate set and harden completely at room temperature before serving or storing.
