  • 2 boneless, skinless chicken breasts (halved horizontally)
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (optional)
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste
  • 4 brioche or sandwich buns
  • Lettuce leaves
  • Sliced tomatoes
  • Pickles

Instructions

  1. Combine buttermilk and hot sauce. Add chicken and marinate at least 30 minutes or up to 4 hours.
  2. Mix flour, Cajun seasoning, paprika, garlic powder, salt, and pepper in a shallow dish.
  3. Remove chicken from marinade, let excess drip off, and dredge thoroughly in seasoned flour mixture.
  4. Heat oil to 350°F (175°C). Fry chicken 4–5 minutes per side until golden brown and cooked through. Drain on paper towels.
  5. Mix mayonnaise, garlic, lemon juice, and salt until smooth. Refrigerate until ready to use.
  6. Toast buns lightly. Spread aioli on both sides. Add lettuce, crispy chicken, tomatoes, and pickles. Top with bun lid.
  7. Serve immediately while hot and crispy.
