  • 7 grams Active dry yeast (the key to rising)

  • 200 grams All-purpose flour (provides the base)
  • 50 grams Bread flour (adds structure)
  • 20 grams Milk powder (optional, enhances moisture)
  • 25 grams Butter (enriches the dough)
  • 1.5 tsp Salt (balances flavors)
  • 1 tbsp Sugar (adds sweetness)
  • 200 grams Mozzarella cheese (the star of the show)

Instructions

  1. Combine the garlic head with salt, olive oil, butter, and parsley in a bowl. Mix until well blended.
  2. In a separate bowl, mix warm milk, yeast, and honey. Let sit until foamy.
  3. Whisk together all-purpose flour, bread flour, milk powder, butter, egg yolks, salt, and sugar in a large mixing bowl.
  4. Pour the yeast mixture into the dry ingredients. Mix until a rough dough forms, then knead for 8-10 minutes.
  5. Place the kneaded dough in a greased bowl, cover it, and let it rise for about 1 hour.
  6. Roll out the dough, cut into squares, and place mozzarella cheese and garlic butter in the center.
  7. Gather the corners of the squares to enclose the filling and seal.
  8. Brush the tops with egg wash and bake at 375°F (190°C) for 20-25 minutes.
