153g all-purpose flour
10g matcha powder
1/4 tsp baking soda
1/4 tsp salt
100g unsalted butter
70g white sugar
50g raw or light brown sugar
1 large egg
120g white chocolate, chopped (reserve 1/4 for topping)
Optional: additional white chocolate chunks to top
Instructions
Preheat your oven to 175°C (350°F).
Place the butter in a small saucepan over medium heat. Cook until it turns golden and you see toasted brown milk solids forming at the bottom. Set aside to cool slightly.
Whisk together the flour, matcha powder, baking soda, and salt in a bowl. Chop the white chocolate into small to medium chunks, reserving about a quarter to use as topping later.
In another bowl, whisk the browned butter along with white and raw sugars until well combined. Crack in the egg and whisk until the mixture lightens in color.
Add the dry ingredients to the wet ingredients and mix gently until just combined. Fold in the chopped white chocolate chunks.
Scoop portions of the cookie dough onto a parchment-lined baking sheet, spacing them evenly. Press some of the reserved white chocolate pieces on top of each cookie.
Bake the cookies in the preheated oven for 10-13 minutes or until they are golden brown around the edges but still soft in the center.
