2 cups broccoli florets
1 cup thinly sliced carrots
1 medium yellow onion, diced
2 cloves garlic, minced
4 tablespoons butter
1/4 cup all-purpose flour
2 cups chicken or vegetable broth
2 cups whole milk
2 cups sharp cheddar cheese, freshly grated
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pinch ground nutmeg (optional)
Instructions
Wash and chop the broccoli into bite-sized florets. Slice the carrots thin, dice the onion, and mince the garlic.
In a large pot, melt butter over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Stir in the garlic and cook for another 30 seconds.
Sprinkle the flour over the sautéed vegetables. Stir constantly for about 2 minutes to form a roux.
Slowly whisk in the broth to avoid lumps. Add the milk and bring the soup to a gentle simmer.
Stir in the carrots and broccoli. Simmer uncovered for 10–15 minutes or until tender.
Reduce heat and add shredded cheese one handful at a time, stirring until fully melted.
Season with salt, pepper, and nutmeg if using. Serve warm with optional toppings or bread.
