This Bok Choy and Mushroom Stir Fry is a quick, healthy, and flavorful dish made with crisp bok choy, earthy mushrooms, and a light savory sauce.

Ingredients

  • 1 pound bok choy, chopped and separated into stems and leaves
  • 8 ounces mushrooms (shiitake, cremini, or button), sliced
  • 2 tablespoons sesame oil or vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Toasted sesame seeds
  • Green onions, thinly sliced

Instructions

  1. Whisk soy sauce, rice vinegar, honey, cornstarch, and water until smooth. Set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add garlic and ginger and cook for 30 seconds until fragrant.
  3. Add mushrooms and stir fry for 3–4 minutes until browned.
  4. Stir in bok choy stems and cook for 2–3 minutes until slightly tender.
  5. Add bok choy leaves and sauce. Toss and cook 1–2 minutes until wilted and sauce thickens.
  6. Remove from heat and garnish with sesame seeds and green onions if desired.
