  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blackberries
  • 1/3 cup pistachios, shelled and roughly chopped
  • 1 tablespoon granulated sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper. Mix flour, powdered sugar, and salt, then cut in butter until crumbly. Press into pan and bake 15–18 minutes until lightly golden.
  2. Beat cream cheese until smooth. Add sugar, egg, and vanilla, mixing until creamy. Spread evenly over the warm crust.
  3. Scatter blackberries over the filling and gently press in. Sprinkle pistachios and optional sugar evenly on top.
  4. Bake 30–35 minutes until the center is set and edges are lightly golden.
  5. Cool completely, then refrigerate 1–2 hours before lifting out and slicing into bars.
