This Walking Taco Casserole transforms your favorite street-style tacos into a comforting, oven-baked dish. It combines the satisfying crunch of corn chips with savory, seasoned ground beef, melty cheese, and your preferred taco toppings for a fun, easy, and family-friendly meal perfect for busy weeknights or feeding a crowd.

  • 1 small yellow onion, finely diced
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 packet (1 ounce) taco seasoning mix
  • ½ cup water
  • ½ cup sour cream
  • 1 (9.25-ounce) bag Frito Lay Scoops! corn chips
  • 2 cups shredded Mexican-style cheese
  • Sliced green onions (for serving)
  • Guacamole (for serving)
  • Salsa (for serving)
  • Sliced jalapeños (for serving)
  • Additional sour cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). In a large skillet, brown 1 lb ground beef, then drain excess fat. Add 1 small finely diced onion and cook until softened.
  2. Stir in 1 (10-ounce) can diced tomatoes with green chilies, 1 (15-ounce) can black beans, 1 packet taco seasoning, ½ cup water, and ½ cup sour cream. Bring to a simmer, then reduce heat and cook for 10-15 minutes, stirring occasionally, until the mixture thickens slightly.
  3. In a 9×13-inch baking dish, arrange half of the Frito Lay Scoops! corn chips evenly across the bottom. Layer with half of the shredded Mexican-style cheese, then spoon half of the beef mixture over the cheese.
  4. Repeat the layering with the remaining half of the Frito chips, shredded cheese, and beef mixture, spreading it out evenly.
  5. Bake for 20-25 minutes, or until the cheese is completely melted, bubbly, and beginning to turn golden brown around the edges.
  6. Carefully remove the casserole from the oven and let it rest for 5-10 minutes on a wire rack before serving. Serve with your desired optional toppings like sliced green onions, guacamole, salsa, sliced jalapeños, and additional sour cream.
