Savory Beef Tenderloin Tips in Creamy Mushroom Gravy

  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium sliced onion
  • 8 ounces sliced mushrooms
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 tablespoons cornstarch
  • to taste salt and pepper

Instructions

  1. Season the beef tenderloin tips with kosher salt and freshly ground black pepper.
  2. Sear the beef tips in a skillet over medium-high heat with olive oil until browned, about 3-4 minutes per side.
  3. Melt butter in the skillet, then add sliced onion. Cook until translucent, about 5 minutes.
  4. Add sliced mushrooms and minced garlic. Cook until mushrooms are golden brown, about 5-7 minutes.
  5. Stir in beef broth, Worcestershire sauce, dried thyme, and cornstarch. Season with salt and pepper to taste and bring to a simmer.
  6. Return the seared beef tips to the skillet, cooking until heated through and gravy thickens, about 5 minutes.
