  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for another minute until fragrant.
  4. Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir well to combine all ingredients.
  5. Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes, stirring occasionally.
  6. Taste the chili and adjust seasoning if needed. You can add more spices or salt according to your preference.
  7. Once the chili has thickened and the flavors have melded together, it’s ready to serve.
