- 1 large onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup beef broth
- Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the diced onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for another minute until fragrant.
