BBQ Beef Meatball & Bell Pepper Skewers for Your Party!

  • 1 lb lean ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cloves minced garlic
  • 1/4 cup chopped parsley
  • Salt to taste
  • Pepper to taste
  • 3 bell peppers (red, yellow, and green)
  • 1 onion (sweet or red)
  • Wooden or metal skewers
  • BBQ sauce

Instructions

  1. Preheat your grill to medium-high heat. If using an oven, set it to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, one egg, minced garlic, chopped parsley, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into small meatballs, about 1 inch in diameter. You should get around 20-24 meatballs.
  4. Chop the bell peppers and onions into chunks, aiming for pieces similar in size to your meatballs.
  5. Take your soaked skewers and thread a meatball, followed by a piece of bell pepper, then an onion chunk. Repeat this pattern until the skewer is filled.
  6. Generously brush the assembled skewers with your BBQ sauce.
  7. Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the meatballs are cooked through.
  8. If using an oven, place the skewers on a baking sheet and bake for 20-25 minutes, turning halfway through.
  9. In the last few minutes of cooking, brush the skewers with a little more BBQ sauce.
  10. Carefully remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

  • These skewers can be enjoyed hot or at room temperature.
  • Feel free to customize the vegetables on the skewers.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
