  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 red bell pepper, diced
  • 2 green onions, sliced
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving

Instructions

  1. If using freshly cooked rice, spread it on a baking sheet to cool and dry out slightly. Day-old rice works best for fried rice.
  2. Heat the vegetable oil over medium-high heat in a large skillet or wok.
  3. Add the diced onion and minced garlic, sautéing until fragrant and the onion becomes translucent.
  4. Stir in the mixed vegetables and red bell pepper. Cook for about 3-4 minutes until they start to soften.
  5. Push the vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked.
  6. Add the cooled rice to the skillet, breaking up any clumps with a spatula. Mix everything together.
  7. Pour in the soy sauce, sweet chili sauce, Sriracha, and sesame oil. Stir to combine thoroughly, ensuring the rice is evenly coated.
  8. Taste the fried rice and season with salt and pepper if needed. Adjust the spice level by adding more Sriracha if desired.
  9. Remove from heat, and fold in the sliced green onions and fresh cilantro for added flavor.
  10. Transfer the Bang Bang Fried Rice to serving bowls and garnish with lime wedges for a refreshing touch.
