Ingredients
Scale
0.5 cup unsalted butter, melted
1 cup brown sugar, packed
1 large egg
2 teaspoons vanilla extract
2 ripe bananas, mashed (use 3 for stronger flavor)
1 cup all-purpose flour
0.5 teaspoon baking powder
0.25 teaspoon baking soda
0.5 teaspoon cinnamon (optional)
0.25 teaspoon salt
0.5 cup optional mix-ins: walnuts, pecans, or chocolate chips
Instructions
Preheat oven to 350°F (175°C) and line or grease an 8×8-inch baking pan.
Whisk together melted butter and brown sugar until smooth. Add egg and vanilla, then stir in mashed bananas.
In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
Combine dry ingredients with the banana mixture, mixing just until combined. Fold in any optional mix-ins.
Spread batter evenly into the prepared pan and bake for 25–30 minutes, until edges are golden and a toothpick comes out mostly clean.
Let cool for 15–20 minutes before slicing into squares.
