  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme, plus extra for serving
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Heat an outdoor grill or a grill pan over medium-high heat to prepare for grilling the peppers.
  2. Place the quartered or sliced bell peppers into a medium bowl. Add 1 1/2 tablespoons olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Toss well to coat the peppers evenly.
  3. Arrange the peppers on the grill and cook for about 4-5 minutes per side, or until grill marks form and the peppers are tender but still hold their shape.
  4. While the peppers are grilling, whisk together 2 tablespoons balsamic vinegar, 2 tablespoons olive oil, 1 teaspoon dijon mustard, minced garlic, 1 teaspoon fresh thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl.
  5. Once the peppers are grilled, immediately transfer them into the marinade bowl. Toss to coat thoroughly and allow them to sit at room temperature for about 15 minutes for the flavors to meld.
  6. Sprinkle extra fresh thyme over the marinated peppers before serving for a bright, herbal finish.
