- 120 g Honey
- 3 large Eggs
- 0.5 teaspoon Ground Cinnamon
- 0.5 teaspoon Ground Cardamom
- 0.25 teaspoon Salt
- 0.5 teaspoon Baking Soda
- 60 ml Olive Oil
- 1 teaspoon Vanilla Extract
- 120 g Honey (for the syrup)
- 2 tablespoons Water
- 1 teaspoon Lemon Juice
- 0.25 teaspoon Ground Cinnamon (for syrup)
- 50 g Pistachios, chopped
- Preheat the oven to 350°F (175°C) and prepare a baking dish by greasing it lightly.
- In a large bowl, combine almond flour, honey, eggs, ground cinnamon, ground cardamom, salt, baking soda, olive oil, and vanilla extract until smooth.
- Pour the batter into the baking dish and smooth the top with a spatula.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- In a small saucepan, combine honey, water, lemon juice, and ground cinnamon. Heat until it simmers and thickens.
- Pour the warm syrup over the baked cake, allowing it to soak in.
- Top with chopped pistachios for garnish.
