No-Bake Coconut Cheesecake Bites are creamy, refreshing, and packed with tropical coconut flavor. Made with a buttery graham cracker crust and smooth coconut cheesecake filling, these bite-sized treats require no oven and are perfect for make-ahead desserts.

Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • ¼ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • ½ cup coconut cream
  • ¾ cup shredded coconut (sweetened or unsweetened)
  • Extra shredded coconut
  • White chocolate drizzle
  • Fresh fruit for serving

Instructions

  1. Mix graham crumbs, sugar, and melted butter. Press about 1 tbsp into each mini muffin cup. Chill 10 minutes.
  2. Beat cream cheese until smooth. Add powdered sugar and vanilla, then beat in coconut cream.
  3. Gently fold shredded coconut into the filling.
  4. Spoon filling over crusts and smooth tops.
  5. Refrigerate 2–3 hours until firm.
  6. Remove from molds and garnish as desired. Serve chilled.
