1 package egg roll wrappers

Instructions
In a medium mixing bowl, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, and cornstarch. Mix well until the apples are evenly coated.
Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface, with one corner facing you. Place about 2 tablespoons of the apple filling in the center of the wrapper.
Roll the Wrapper: Fold the corner closest to you over the filling. Tuck in the sides and roll tightly away from you to form an egg roll shape. Seal the edges with a bit of water.
Heat the Oil: In a deep pan or fryer, heat oil over medium heat until hot (around 350°F/175°C).
Fry the Egg Rolls: Carefully drop the egg rolls into the hot oil, a few at a time. Fry for 2-3 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
