This delightful Amaretto Peaches recipe features ripe peaches caramelized with brown sugar, butter, and a splash of dark rum and amaretto liqueur, enhanced with orange zest and juice. Topped with toasted almonds and creamy vanilla ice cream, it’s a luscious dessert perfect for any occasion.

  • 4 large peaches or 5 medium peaches, pitted and sliced
  • 4 tbsp unsalted butter
  • ¼ cup brown sugar, plus 2 tbsp additional
  • 1 pinch salt
  • Zest of 1 whole orange
  • Juice of half an orange
  • 2 oz dark rum
  • 2 oz amaretto liqueur
  • ⅓ cup sliced almonds
  • 4 scoops vanilla ice cream
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Remove the pits from the peaches and slice them into moderately thick slices to avoid mushy texture during cooking.
  2. Heat a pan over medium heat and roast the sliced almonds until golden brown, about 3-5 minutes, stirring frequently to prevent burning. Remove almonds from the pan and set aside. Wipe out the pan to prepare for next step.
  3. Preheat the same pan over medium-high heat for about 2 minutes. Add the butter and allow it to melt completely. Add the peach slices, a pinch of salt, and ¼ cup brown sugar. Cook for 3-4 minutes letting the peaches caramelize, stirring gently.
  4. Add the orange zest and juice of half an orange to the pan with peaches, continuing to cook for another 4-5 minutes until the peaches are tender and the sauce has thickened slightly.
  5. Pour in the dark rum and amaretto liqueur, stirring to combine. Allow the mixture to reduce over medium heat for about 3-4 minutes until it becomes syrupy and glossy.
  6. Transfer the warm peach mixture into serving bowls. Top each serving with a scoop of vanilla ice cream, sprinkle with toasted almonds, and garnish with a fresh mint leaf if desired. Serve immediately.
