  • 4 pounds ground alligator meat
  • 2 pounds ground beef
  • 4 cups diced onion
  • 2 cups diced celery
  • 2 cups diced bell pepper
  • 4 tablespoons diced garlic
  • 4 tablespoons diced jalapeño
  • 2 cans pinto beans
  • 6 cans tomato sauce
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • salt to taste
  • cracked black pepper to taste
  • 15 bags corn chips
  • garnish: shredded cheddar cheese, minced red onions, sliced green onions, sliced jalapeño peppers

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the ground alligator meat and ground beef, cooking until browned, about 8-10 minutes.
  3. Stir in the diced onion, diced celery, diced bell pepper, diced garlic, and diced jalapeño. Cook until the vegetables are tender, around 5-7 minutes.
  4. Combine the pinto beans, tomato sauce, chicken broth, chili powder, ground cumin, salt, and cracked black pepper. Mix well.
  5. Simmer the chili for approximately 30 minutes, stirring occasionally.
  6. Serve with corn chips and garnish with shredded cheddar cheese, minced red onions, sliced green onions, and sliced jalapeño peppers.
