This Air Fryer Greek Chicken Bowl combines juicy, seasoned chicken and fresh vegetables air-fried to perfection, served over fluffy white rice and topped with classic Greek ingredients.

  • 1 ½ pounds boneless, skinless chicken breasts
  • ¼ cup Greek vinaigrette
  • 1 tablespoon Greek seasoning
  • 1 teaspoon cracked pepper
  • 1 medium zucchini
  • 1 medium bell pepper (any color)
  • 1 cup cherry tomatoes, halved
  • 2 mini cucumbers, chopped
  • ½ red onion, halved and sliced into thin strips
  • 2 cups cooked white rice
  • ½ cup kalamata olives
  • ½ cup crumbled feta cheese
  • ½ cup tzatziki (more if desired)

Instructions

  1. Chop the chicken into bite-sized pieces and place them in a large mixing bowl. Slice the zucchini into rounds and dice the bell pepper, then add both to the bowl with the chicken.
  2. Pour the Greek vinaigrette, Greek seasoning, and cracked pepper over the chicken and vegetables. Stir thoroughly to coat all pieces evenly with the marinade.
  3. Spritz the air fryer basket with nonstick spray to prevent sticking. Transfer the chicken and vegetable mixture into the air fryer basket. Cook at 400°F (204°C) for 10-12 minutes, shaking the basket halfway through to ensure even cooking. Check that the chicken reaches an internal temperature of 165°F (74°C) for safety.
  4. Divide the cooked white rice evenly among four bowls. Top each serving with the air-fried chicken and vegetable mixture.
  5. Arrange halved cherry tomatoes, chopped cucumbers, sliced red onion, kalamata olives, and crumbled feta cheese on top of the chicken and rice in each bowl.
  6. Drizzle each bowl with approximately 2 tablespoons of creamy tzatziki sauce, or more to taste, to add a refreshing and tangy finish to the dish.
