Wholesome Frozen Blueberry Yogurt Clusters are a delightful treat combining fresh blueberries, crunchy walnuts, creamy vanilla Greek yogurt, and a rich dark chocolate coating. These clusters offer a perfect balance of fruity, nutty, and chocolaty flavors with a hint of flaky sea salt, making them a perfect snack or light dessert.

  • 1 cup fresh blueberries
  • 1/2 cup chopped walnuts
  • 3/4 cup 2-5% vanilla Greek yogurt
  • 1 1/2 cups dark chocolate chips
  • 3 tablespoons coconut oil
  • A sprinkle of flaky salt for topping

Instructions

  1. Prepare the Blueberry Yogurt Mixture: Line a baking sheet with parchment paper. In a medium bowl, mix fresh blueberries, chopped walnuts, and vanilla Greek yogurt until well combined.
  2. Form and Freeze the Clusters: Scoop about 2 tablespoons of the mixture per cluster onto the prepared baking sheet, spacing them apart. Freeze for 1 to 1.5 hours until firm.
  3. Melt the Chocolate Coating: About 10 minutes before clusters are ready, combine dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until smooth. Let cool slightly.
  4. Coat the Clusters with Chocolate: Dip each frozen cluster into the melted chocolate using two forks, ensuring full coverage. Place coated clusters back on the parchment paper. Sprinkle with flaky sea salt, if desired.
  5. Set the Chocolate and Store: Return clusters to the freezer or refrigerator for about 10 minutes to set the chocolate. Enjoy immediately or store leftovers in an airtight container in the refrigerator for up to one week. They can also be frozen, but will be very hard.

Notes

  • You can substitute walnuts with pecans or almonds.
  • For a sweeter treat, use sweeter Greek yogurt or add a teaspoon of honey.
  • Ensure chocolate is slightly cooled before dipping to prevent melting the yogurt clusters.
