  • 4 cloves garlic (minced)
  • 12 red chili peppers (sliced, adjust to taste)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
  2. In a separate bowl, combine the chopped lemongrass, minced garlic, sliced chili peppers, fish sauce, soy sauce, vegetable oil, brown sugar, and black pepper.
  3. Pour the marinade over the chicken pieces, ensuring they are well-coated. Cover and let it marinate for at least 30 minutes in the refrigerator for optimal flavor.
  4. In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat until shimmering.
  5. Add the marinated chicken to the pan in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  6. Pour any remaining marinade over the chicken and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
