  • 1 can Condensed Milk
  • 2 cups Coconut Milk
  • 3 tablespoons Butter
  • 1 teaspoon Ube Flavoring
  • ½ cup Shredded Cheddar Cheese

Instructions

  1. Pour 2 cups of coconut milk into a pot and bring to a gentle boil over medium heat.
  2. Stir in 1 can of condensed milk until fully incorporated.
  3. Gradually add 1 lb. of grated purple yam and 1 teaspoon of ube flavoring, stirring continuously.
  4. Cook over medium heat, stirring for about 30 minutes until the mixture thickens into a creamy consistency.
  5. Add 3 tablespoons of butter and stir until it melts and blends into the mixture.
  6. Continue cooking for another 10-12 minutes until it reaches your desired thickness.
  7. Pour the thickened halaya into a serving container.
  8. Top with ½ cup of shredded cheddar cheese, allowing it to melt slightly.
