  • 2 ripe but firm mangoes, julienned
  • 1 cup shredded carrots
  • 1/2 red bell pepper, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh mint, chopped (optional)
  • 1/4 cup roasted peanuts, roughly chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon fish sauce (or soy sauce for vegetarian option)
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 1 small garlic clove, minced
  • 1/2 teaspoon grated fresh ginger
  • Optional: red chili flakes or thinly sliced chili

Instructions

  1. Peel mangoes and slice into thin julienne strips using firm mangoes for best texture.
  2. Thinly slice bell pepper and red onion. Shred carrots if needed.
  3. In a small bowl, whisk lime juice, fish sauce (or soy sauce), honey, sesame oil, garlic, ginger, and chili flakes if using.
  4. In a large bowl, toss mango, carrots, bell pepper, onion, cilantro, and mint.
  5. Pour dressing over salad and toss gently to combine.
  6. Top with roasted peanuts just before serving.
