Thai Broth – A Fragrant and Flavorful Soup Base for Endless Thai Dishes

Ingredients

  • 10 cups (2.4 L) water
  • 1 stalk lemongrass, smashed and cut into 2-inch pieces
  • 34 slices fresh galangal (or fresh ginger)
  • 4 kaffir lime leaves, torn
  • 4 cloves garlic, smashed
  • 1 small onion, quartered
  • 1 carrot, cut into chunks (optional)
  • 1 teaspoon salt, or to taste
  • 1 tablespoon soy sauce (or fish sauce)
  • Optional: mushrooms, cilantro stems, chicken bones or carcass

Instructions

  1. Smash lemongrass and garlic, slice galangal, and tear kaffir lime leaves to release oils.
  2. Add water and all aromatics to a large stockpot.
  3. Bring to a boil, then reduce heat and simmer gently for 45–60 minutes.
  4. Add salt and soy sauce or fish sauce. Adjust to taste.
  5. Remove all solids using a fine mesh strainer.
  6. Let cool completely before refrigerating or freezing.
