- 10 cups (2.4 L) water
- 1 stalk lemongrass, smashed and cut into 2-inch pieces
- 3–4 slices fresh galangal (or fresh ginger)
- 4 kaffir lime leaves, torn
- 4 cloves garlic, smashed
- 1 small onion, quartered
- 1 carrot, cut into chunks (optional)
- 1 teaspoon salt, or to taste
- 1 tablespoon soy sauce (or fish sauce)
- Optional: mushrooms, cilantro stems, chicken bones or carcass
- Smash lemongrass and garlic, slice galangal, and tear kaffir lime leaves to release oils.
- Add water and all aromatics to a large stockpot.
- Bring to a boil, then reduce heat and simmer gently for 45–60 minutes.
- Add salt and soy sauce or fish sauce. Adjust to taste.
- Remove all solids using a fine mesh strainer.
- Let cool completely before refrigerating or freezing.
