Quick Teriyaki Chicken is a simple and flavorful dish made in under 30 minutes, perfect for busy weeknights.

  • 2 lbs chicken thighs
  • ½ cup soy sauce
  • ¼ cup mirin
  • ¼ cup brown sugar
  • 3 cloves garlic
  • 1 tbsp ginger
  • 3 stalks green onions
  • 2 cups rice

Instructions

  1. In a mixing bowl, whisk together ½ cup soy sauce, ¼ cup mirin, and ¼ cup brown sugar until sugar dissolves.
  2. Place chicken thighs in a bowl or zip-top bag, pour marinade over, and let sit for 10-15 minutes.
  3. Preheat a large skillet over medium heat for about 2 minutes. Add oil until shimmering.
  4. Add marinated chicken thighs to skillet, cooking for 5-7 minutes per side until golden brown and cooked through.
  5. Add minced garlic and grated ginger to skillet for the last 2 minutes.
  6. Remove chicken from skillet, let rest, slice, and serve over rice, garnished with green onions.
