1 refrigerated pie crust (or homemade)
3 tablespoons olive oil
⅔ cup yellow onion, minced
3 cloves garlic, minced
20 ounces spinach, stems removed and chopped
¼ cup fresh parsley, chopped
3 tablespoons dried dill
1 cup crumbled feta cheese
1 cup ricotta cheese
1 cup shredded parmesan cheese
1 teaspoon salt
1 teaspoon pepper
3 large eggs, beaten
Instructions
Preheat the oven to 350 degrees Fahrenheit. Line a 9-inch pie dish with the refrigerated pie crust and place it in the refrigerator to keep cold while you prepare the filling.
Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add the minced yellow onion and sauté until tender. Then add the minced garlic and chopped spinach, cooking until the spinach has wilted down. Remove from heat and set aside.
In a large bowl, whisk together the chopped fresh parsley, dried dill, crumbled feta, ricotta, shredded parmesan, salt, pepper, and beaten eggs until well combined.
Add the sautéed spinach and onion mixture to the cheese blend. Mix thoroughly to evenly distribute ingredients.
Remove the cold pie crust from the refrigerator and fill it with the spinach and cheese mixture, spreading evenly.
Place the pie dish in the preheated oven and bake for 45 to 50 minutes until the top is golden brown and the filling is set.
Remove the pie from the oven and let it rest for at least 5 minutes before slicing and serving warm.
