  • 4 cups (960ml) fresh apple cider
  • 2 cups (240g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 teaspoons ground cinnamon (for loaf)
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves (optional)
  • 2 large eggs
  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 1/2 cup (120g) full-fat sour cream or plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1 cup (240ml) reduced apple cider
  • 1/2 cup (100g) granulated sugar (for crust)
  • 2 teaspoons ground cinnamon (for crust)
  • 1/4 cup (57g) unsalted butter, melted (for crust)

Instructions

  1. Pour 4 cups fresh apple cider into a saucepan. Bring to a boil, then reduce heat to medium-low and simmer, uncovered, for 45-60 minutes, until reduced to 1 cup (240ml) and syrupy. Cool completely to room temperature.
  2. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, lining the bottom with parchment paper. In a large bowl, whisk together flour, 1 cup granulated sugar, brown sugar, baking powder, baking soda, salt, 2 tsp cinnamon, nutmeg, and optional cloves.
  3. In a separate bowl, whisk eggs, 1/2 cup melted butter, sour cream/Greek yogurt, vanilla, and 1 cup cooled reduced apple cider until well combined.
  4. Pour the wet mixture into the dry ingredients. Gently fold with a spatula until just combined; do not overmix. Pour batter into the prepared loaf pan and smooth the top.
  5. Bake for 50-65 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10-15 minutes, then lift onto a wire rack to cool completely before applying the crust.
  6. While the loaf cools, whisk 1/2 cup granulated sugar and 2 tsp cinnamon in a small bowl. Melt 1/4 cup unsalted butter in another small bowl.
  7. Once the loaf is completely cool, generously brush it with the melted butter. Roll or sprinkle the loaf with the cinnamon sugar mixture, pressing gently to adhere. Slice and serve.
