  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooked white rice, for serving

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs until browned on both sides. Remove chicken from skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Stir in thyme, salt, and pepper.
  5. Return the chicken thighs to the skillet. Bring the sauce to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until chicken is cooked through and tender.
  6. Serve the smothered chicken and gravy over cooked white rice for a comforting meal.

Notes

  • For a richer gravy, you can add a tablespoon of butter at the end.
  • Feel free to add other vegetables like mushrooms or bell peppers.
  • Adjust seasoning to your taste.
