Hearty and Tender Slow Cooker Pot Roast – A Comfort Food Classic Made Easy

Ingredients

  • 34 lb chuck roast
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for searing)
  • 1 yellow onion, sliced
  • 4 cloves garlic, minced
  • 4 medium carrots, cut into chunks
  • 4 medium Yukon gold potatoes, quartered
  • 2 cups beef broth (low sodium)
  • 1 tbsp Worcestershire sauce
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf

Instructions

  1. Season roast with salt and pepper. Sear in olive oil until browned on all sides.
  2. Place onions and garlic in slow cooker. Add roast, carrots, and potatoes.
  3. Mix beef broth, Worcestershire, thyme, rosemary, and bay leaf. Pour over roast.
  4. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours.
  5. Thicken cooking liquid with cornstarch slurry if desired.
  6. Slice or shred roast and serve hot with vegetables and broth.
