Savory Chicken Chow Fun: Easy Fried Rice Noodles at Home

Ingredients

  • 250 g Boneless chicken thigh/breast
  • 1 tsp Light soy sauce
  • 1/4 tsp Baking soda
  • 1 tsp Sesame oil
  • 300 g Flat rice noodle (fresh/boiled)
  • 2 slices Ginger (finely chopped)
  • 2 cloves Garlic (finely chopped)
  • 1/2 Bell pepper, red (thinly sliced)
  • 1/2 Bell pepper, green (thinly sliced)
  • 34 Spring onion (cut into 2” pieces)
  • 150 g Bean sprouts
  • 1 tbsp Oyster sauce
  • 1 tbsp Light soy sauce
  • 1 tsp Dark soy sauce
  • 1 tsp Sugar
  • 1 tbsp Rice vinegar
  • 2 tbsp Water
  • 2 tbsp Vegetable oil

Instructions

  1. Marinate the chicken with light soy sauce, baking soda, and sesame oil in a bowl for at least 15 minutes.
  2. Heat vegetable oil in a large skillet over medium heat until shimmering.
  3. Add the marinated chicken to the pan, cooking while stirring frequently until fully cooked and no longer pink, about 5-7 minutes.
  4. Incorporate ginger and garlic into the pan, sautéing for 1-2 minutes until fragrant.
  5. Toss in the thinly sliced bell peppers, spring onion, and bean sprouts, stir fry for 2-3 minutes.
  6. Whisk together oyster sauce, light soy sauce, dark soy sauce, sugar, rice vinegar, and water in a bowl.
  7. Pour the sauce over the stir-fried ingredients and gently add the boiled flat rice noodles. Mix everything together.
  8. Cook for an additional 2-3 minutes until heated through.
