  • For the Tamarind-Date Chutney:
  • 1 tablespoon Tamarind paste
  • 1/2 cup Dates, chopped
  • 1 tablespoon Brown sugar (optional)
  • 1 teaspoon Cumin powder
  • 1/2 teaspoon Chili powder (adjust to taste)
  • 1/2 cup Water

Instructions

  1. Prepare the Dough: In a mixing bowl, combine all-purpose flour and salt. Gradually add cold water and a splash of vegetable oil. Mix until a smooth, soft dough forms. Let it rest for 30 minutes.
  2. Make the Filling: Boil, peel, and mash the potatoes. In a pan, heat a little oil and add cumin seeds; sauté until fragrant. Mix in the mashed potatoes, green peas, garam masala, and chopped cilantro. Allow it to cool.
  3. Shape the Samosas: Divide the dough into equal portions. Roll each portion into a thin oval, then cut in half. Form a cone by sealing the straight edge with a little water. Fill the cone with the potato mixture and seal the top, ensuring no filling escapes.
  4. Fry the Samosas: Heat oil in a deep pan over medium heat. Once hot, gently slide in the samosas, frying until golden brown and crispy on all sides, about 5-7 minutes. Drain on paper towels.
  5. For the Chutney: In a bowl, mix tamarind paste, chopped dates, cumin powder, chili powder, and water. Adjust consistency as needed. Stir until well combined, and taste to balance flavors.
