Ingredients
Scale
1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
8 oz cream cheese, softened
1 cup canned pumpkin puree
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon pumpkin spice
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup whipped cream (for topping, optional)
Instructions
Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.
Make the Crust: In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press this mixture evenly into the bottom of the prepared baking dish.
Mix the Filling: In a separate bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, powdered sugar, vanilla extract, pumpkin spice, cinnamon, and salt. Mix until fully combined and smooth.
Spread the Filling: Pour the pumpkin cheesecake mixture over the prepared crust. Use a spatula to spread it evenly.
Chill: Cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
Slice: Once set, lift the cheesecake out of the pan using the parchment overhang. Cut into small squares or bites.
Serve: Top with whipped cream if desired before serving.
