Instructions

  1. In a large bowl, combine the pumpkin puree, softened cream cheese, vanilla extract, and pumpkin pie spice. Mix until smooth.
  2. Stir in the Biscoff cookie crumbs gradually until fully incorporated.
  3. Cover the bowl with plastic wrap and refrigerate for about 1 hour or until the pumpkin Biscoff mixture is firm enough to handle.
  4. Once chilled, scoop out small amounts of the pumpkin Biscoff mixture and roll them into balls, about 1 inch in diameter.
  5. In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until smooth.
  6. Dip each pumpkin Biscoff truffle into the melted white chocolate, allowing excess chocolate to drip off.
  7. Roll the chocolate-coated pumpkin Biscoff truffles in crushed Biscoff cookies until fully covered.
