Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1 cup crushed Oreo cookies (plus extra for decoration)
  • 1 batch Oreo frosting (recipe below)
  • Decorative bat toppers (store-bought or homemade)
  • For Oreo Frosting:
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup crushed Oreo cookies
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, mix the egg, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry mixture, stirring gently until you achieve a smooth batter for your Oreo bat cupcakes.
  5. Carefully stir in the boiling water. This will thin out the batter; don’t worry, it’s meant to be this way!
  6. Gently fold in the crushed Oreo cookies into the batter until evenly distributed.
  7. Pour the batter into the prepared cupcake tin, filling each liner about two-thirds full.
  8. Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and allow to cool in the pan for about 10 minutes. Then transfer them to a wire rack to cool completely.
  10. While the cupcakes are cooling, make the Oreo frosting. Beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar, mixing well until combined. Add the crushed Oreos, vanilla, and enough cream to reach your desired consistency for the bat-themed Oreo desserts.
  11. Once the cupcakes are completely cool, top each with a generous swirl of Oreo frosting.
  12. Add crushed Oreos on top of the frosting, and place decorative bat toppers on each cupcake for adorable Oreo bat cupcakes.

Notes

  • Use high-quality ingredients for the richest flavor, especially good cocoa powder and fresh Oreos.
  • Adjust frosting consistency: if too thick, add more heavy cream one tablespoon at a time.
  • Decorate with style: consider edible glitter or themed cupcake wrappers for extra flair on your Halloween cupcake recipes with Oreos.
  • Test for doneness: insert a toothpick into the center of a cupcake; it should come out clean or with crumbs, not batter.
  • For a vegan version, substitute butter with coconut oil and use a flaxseed mixture in place of the egg.
  • Store leftover Oreo bat cupcakes in an airtight container at room temperature for a day or in the refrigerator for up to 5 days.
