1 cup roasted pistachios (shelled and chopped)
½ cup cream cheese (softened)
¼ cup powdered sugar
1 teaspoon vanilla extract
1 egg (beaten, for egg wash)

Instructions
Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the filling: In a mixing bowl, combine the softened cream cheese, chopped pistachios, powdered sugar, vanilla extract, and a pinch of salt. Mix until well combined.
Roll out the pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out any creases.
Cut the pastry: Cut the sheet into triangles (about 4-5 inches wide at the base) to form the croissants.
Fill the croissants: Place a tablespoon of the pistachio filling at the base of each triangle. Carefully roll the pastry towards the tip, ensuring you tuck in the filling as you go.
Brush with egg wash: In a small bowl, mix the beaten egg with the milk. Brush the tops of the croissants with the egg wash for a golden finish.
Bake: Place the croissants on the prepared baking sheet and bake for 25-30 minutes, or until they turn golden brown and flaky.
