  • 8 black olives (for decoration)
  • 1 cup mashed potatoes (optional, for facial features)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, chopped onion, minced garlic, 1/2 cup ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until fully incorporated.
  3. Take portions of the meat mixture and shape them into monster figures. Each mini monster meatloaf should resemble a friendly monster, about 3-4 inches long.
  4. Before placing on the baking sheet, make a small indentation on each monster’s back and fill with shredded cheese.
  5. Place the shaped mini meatloaves on the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes or until cooked through (internal temperature should reach 160°F or 74°C).
  6. While the meatloaf is baking, cut the bell pepper into thick slices for monster eyes. Use black olives for pupils. Once the mini monster meatloaf is done, remove from oven and let cool slightly before decorating.
  7. Use extra ketchup to create “mouths” on your meatloaf monsters.
