This Easy Low Carb Cabbage Beef Stroganoff combines comfort and low-carb enjoyment for a delicious dinner option.

  • 2 tablespoons Olive oil
  • 4 cups Cabbage
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 pound Ground beef
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Dried thyme
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 cup Beef broth
  • 1 cup Sour cream
  • 4 ounces Cream cheese
  • 1 cup Sliced mushrooms

Instructions

  1. In a large skillet, drizzle in the olive oil over medium heat. Add the diced onion and sauté until it’s softened, about 3-4 minutes.
  2. Toss in the minced garlic and cook for an additional minute.
  3. Introduce the ground beef, breaking it apart until browned, seasoning with salt and black pepper.
  4. Stir in the sliced cabbage, cooking until tender, about 5-6 minutes.
  5. Add dried thyme, Worcestershire sauce, dijon mustard, and beef broth. Bring to a simmer and cook for around 10 minutes.
  6. Stir in the sour cream, cream cheese, and sliced mushrooms until well combined.
  7. Adjust the seasoning with remaining salt and pepper to taste.
  8. Transfer to a baking dish and bake in a preheated oven at 350°F for 20-25 minutes.
