Ingredients

Scale
  • 16 oz yee mein noodles
  • 2 whole lobsters (or 4 lobster tails)
  • ½ cup cornstarch (for coating)
  • 1 teaspoon salt (to enhance flavors)
  • ¼ teaspoon white pepper (adds warmth)
  • 2 tablespoon oyster sauce
  • ½ tablespoon soy sauce
  • 2 teaspoon sugar (to balance flavors)
  • 1 tablespoon chicken bouillon powder
  • 1 tablespoon Shaoxing wine (adds flavor complexity)
  • 10 cloves garlic (thinly sliced)
  • 2 inch ginger (sliced (2 oz))
  • 10 stalks green onion (cut into 2-inch pieces)
  • 2 teaspoon cornstarch (for slurry)
  • 1 tablespoon water (for slurry)
  • 1 teaspoon sesame oil

Instructions

  1. Cook the yee mein noodles according to the package instructions. Drain and set aside.
  2. Prepare the lobsters or lobster tails by cutting them into bite-sized pieces.
  3. Toss the lobster pieces with ½ cup of cornstarch, salt, and white pepper.
  4. Heat the neutral oil in a wok over medium heat. Fry the lobster pieces until cooked through and golden brown, about 4-5 minutes. Set aside.
  5. Sauté the garlic and ginger in the same wok until fragrant, about 1-2 minutes.
  6. Add the hot water, green onion whites, oyster sauce, soy sauce, sugar, chicken bouillon powder, and white pepper. Bring to a boil.
  7. Mix 2 teaspoons of cornstarch with 1 tablespoon of water to create a slurry. Pour this into the wok to thicken the sauce.
  8. Combine the cooked noodles and fried lobster pieces in the wok. Toss gently to coat well with the sauce.
  9. Finish by adding the green onion greens and sesame oil. Serve hot.
