Mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon juice. Rub over lamb chops and marinate for 30 minutes at room temperature or up to 12 hours refrigerated.
Heat a cast-iron skillet or grill pan over medium-high heat until hot.
Sear lamb chops for 4–5 minutes per side until browned. Internal temperature should reach about 145°F (63°C) for medium.
Transfer to a plate, cover loosely with foil, and rest for 5–10 minutes.
Finish with fresh herbs or a squeeze of lemon and serve hot.
