2 cups shredded green cabbage
1 small carrot, grated
1 tablespoon oil (mustard or vegetable oil)
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon salt (adjust to taste)
2 tablespoons chopped fresh cilantro
Instructions
Prepare the cabbage by discarding wilted outer leaves and slicing it into medium shreds. Rinse and drain well.
Heat oil in a skillet over medium heat. Once hot, add mustard seeds and let them pop.
Add turmeric powder, red chili powder, and coriander powder. Stir quickly to release the flavors without burning.
Add the cabbage and grated carrot. Stir to coat the veggies in the spiced oil. Add salt.
Spread the cabbage evenly in the pan. Let it roast undisturbed for 3–4 minutes. Stir and repeat until lightly crisped on the edges (about 12–15 minutes).
Turn off heat, garnish with chopped cilantro, and serve hot.
