  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  3. Spread the Brussels sprouts in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and nicely browned and crispy.
  5. While the sprouts are roasting, whisk together the balsamic vinegar, honey, and Dijon mustard (if using) in a small bowl.
  6. Once the Brussels sprouts are done, transfer them back to the bowl.
  7. Pour the honey balsamic glaze over the roasted Brussels sprouts and toss to coat.
