1 can artichoke hearts (14 oz)
1 cup frozen spinach (60g) or kale (can be omitted)
2/3 cup Parmesan cheese (60g) or nutritional yeast
1/2 cup Greek yogurt (120g) or dairy free alternative
1/2 tsp salt
1/2 tsp garlic powder
Instructions
Preheat your oven to 350° Fahrenheit (177° Celsius).
Drain artichoke hearts but do not rinse. Squeeze excess moisture from the frozen spinach, then roughly chop the artichokes and spinach.
Add all ingredients to a heat safe bowl, and stir until well combined.
Enjoy as a cold dish now. Or bake on the center rack of the oven for 20 minutes or until hot, bubbly, and lightly browned on top. Alternatively, microwave for 5 minutes (stirring halfway through) or until evenly heated.
Serve the healthy appetizer hot from the oven, alongside toasted baguette, tortilla chips, or an array of raw vegetables.
Refrigerate leftovers in an airtight covered container for up to five days.
Notes
This dip can be served cold or hot.
