  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in chicken broth and bring to a boil.
  6. Stir in orzo pasta and chopped bell pepper.
  7. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is cooked through and the liquid is mostly absorbed.
  8. Stir in fresh parsley.
  9. Season with salt and black pepper to taste.
