1 pound ground beef
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (15 ounce) can diced tomatoes, undrained
4 cups beef broth
1 1/2 cups orzo pasta
1 teaspoon dried Italian seasoning
Salt and pepper to taste
Optional: shredded cheese for topping
Instructions
In a large skillet or pot, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
Add olive oil to the skillet. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Stir in the diced tomatoes, beef broth, orzo pasta, and Italian seasoning. Season with salt and pepper.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is cooked through and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
Serve the ground beef orzo hot. Top with shredded cheese if desired.
Notes
For a creamier ground beef orzo, stir in a splash of heavy cream or a tablespoon of butter at the end of cooking.
