Bold & Flavorful Grilled Spicy Mexican Chicken Tostadas You’ll Make Again and Again

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne (optional)
  • 68 crispy corn tostada shells
  • 1 cup refried beans, warmed
  • 1 avocado, mashed or sliced
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/2 cup crumbled queso fresco or shredded cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes or pico de gallo
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Mix olive oil, lime juice, and spices. Coat chicken and marinate for 20–30 minutes.
  2. Grill over medium-high heat for 5–6 minutes per side until cooked through. Rest, then slice.
  3. Warm refried beans and prep all fresh toppings.
  4. Spread beans on shells, add chicken, avocado, sour cream, lettuce, tomatoes, cheese, and cilantro.
  5. Finish with fresh lime juice and serve immediately.
