  • 2 cups Oats (Blitz half into a powder for enhanced texture)
  • 1 cup Dark Chocolate Chunks
  • 1/2 cup Dried Sour Cherries
  • 1/2 cup Toasted Pecans
  • 1 teaspoon Cinnamon
  • 1 teaspoon Xanthan Gum
  • 3/4 cup Sweetener
  • 1/2 cup Nuts or Seeds (Optional)
  • 1 teaspoon Spices (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blitz half of the oats in a food processor until finely powdered.
  3. Combine the blitzed oats, xanthan gum, and cinnamon in a large bowl.
  4. Mix the wet ingredients in a separate bowl, then combine with dry ingredients.
  5. Fold in the dark chocolate chunks, dried sour cherries, and toasted pecans.
  6. Scoop the cookie dough onto a lined baking sheet and flatten slightly.
  7. Bake for 10-12 minutes until edges are set and lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.
