  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened (optional for richness)
  • Additional whipped cream
  • Powdered sugar (for snow effect)
  • Crushed gingersnaps or cookie crumbs
  • Sugared cranberries or rosemary sprigs
  • Chocolate drizzle or melted white chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a bowl, whisk flour, baking powder, baking soda, spices, and salt.
  3. In a large bowl, beat eggs, granulated sugar, and brown sugar until pale and thick (4–5 minutes).
  4. Mix in molasses and vanilla until smooth.
  5. Gently fold dry ingredients into the wet mixture in two additions, being careful not to deflate the batter.
  6. Pour into prepared pan and spread evenly. Bake 10–12 minutes, until the cake springs back when touched.
  7. Immediately invert the cake onto a towel dusted with powdered sugar. Peel off parchment and roll up the cake (with the towel inside). Cool completely.
  8. Beat heavy cream, powdered sugar, vanilla, and cream cheese (if using) until stiff peaks form.
  9. Unroll cooled cake, spread the filling evenly, and re-roll tightly without the towel.
  10. Place on a serving platter, dust with powdered sugar, or decorate with whipped cream, cranberries, and festive toppings.
